Pasta and Tuna Patties with Salsa
Ingredients
- ½ cup small pasta shapes
- 425g GREENSEAS Tuna in Springwater, drained
- 1 medium zucchini, grated
- 1 cup flour
- 2 eggs
- ½ cup milk
- ¼ cup chopped chives
- 2 large mint leaves, finely chopped
- 2 tbsps olive oil
- 2 ripe tomatoes, finely chopped
- 1 tbsp finely sliced red onion
- 1 tbsp olive oil
- 2 tsps white wine vinegar
- 1 tbsp mint leaves, sliced
Method
- Cook pasta in a saucepan of boiling water for 10 minutes, or until just cooked. Drain and rinse under cold water.
- Combine pasta with remaining ingredients, except oil. Mix well and season to taste.
- Heat oil in a pre-heated frying pan and drop in tablespoons of mixture. Cook both sides for 3-4 minutes or until golden. Remove to a paper towel lined plate. Keep warm.
- Combine tomato salsa ingredients and serve with patties and a green salad.
