Coriander, Almond & Tuna Pilaf

Introduction

Pilaf is a savoury rice dish cooked with meat, fish, chicken and/or vegetables, with herbs and spices, nuts and dried fruits. Many countries have their own delicious version of a pilaf and will depend upon the meats and spices typical to that cuisine, as to the ingredients used in the dish.

  • 2 tsp olive oil
  • 1 red onion, finely sliced
  • 1 cup basmati rice
  • 2 tbsp korma curry paste
  • 3 cups vegetable stock
  • 1 cup cauliflower florets
  • 425g can GREENSEAS Tuna Chunks in Springwater , drained
  • 2 tomatoes, diced
  • 1 cup coriander leaves, chopped
  • ¼ cup currants
  • ¼ cup toasted slivered almonds, for serving

Recipe tips

  1. Heat oil in a large frypan or saucepan. Add onion and cook for 1-2 minutes until softened. Stir in rice and curry paste until rice is well coated.
  2. Add stock and cauliflower to the pan. Bring to the boil, reduce heat, cover and simmer for 15 minutes, until rice is tender.
  3. Stir in GREENSEAS Tuna , tomatoes, coriander and currants. Cook for a further 3-4 minutes until heated through. Serve sprinkled with almonds and a squeeze of lemon juice if desired.
