Introduction
Soft and creamy in the centre with a crisp outer coating, these tuna patties are great served on a plate with salad or, my family love them wrapped in a tortilla or souvlaki bread, topped with tomato and cucumber salad and finished with a drizzle of Caesar dressing.
Ingredients
- 800g potatoes, peeled and chopped
- 425g can GREENSEAS Tuna Chunks in Springwater, drained
- 4 cups fresh breadcrumbs
- 1 cup Caesar Dressing
- 2 eggs
- 1/3 cup finely chopped chives
- freshly ground black pepper, to taste
- 2 tbsp olive oil
- Lemon wedges, for serving
Instructions
- Cook potatoes in a saucepan of boiling water until tender. Drain and mash. Cool slightly.
- Combine potatoes with GREENSEAS Tuna , two cups of breadcrumbs, Caesar dressing, egg, chives and pepper in a large bowl. Mix well and season to taste. Form into eight patties and press into remaining breadcrumbs to coat. Refrigerate for 30 minutes.
- Heat oil in a large frying pan. Add patties and cook over low heat for 5 minutes either side until golden and cooked through. Serve with lemon wedges and a tomato & cucumber salad, accompanied with extra Caesar dressing if desired.
