Introduction

Rice salads are always a hit at barbeques and this Asian inspired salad is a fabulous salad to add to your repertoire.

Ingredients

  • 1/3 cup basmati rice
  • 400g can baby corn, drained and chopped
  • 180g can GREENSEAS Tuna Chunks in Springwater , drained
  • ΒΌ small red capsicum, thinly sliced
  • 1 tbsp chopped coriander leaves

Instructions

  1. Cook rice in a saucepan of boiling water for 10 -12 minutes, or until tender. Drain and rinse thoroughly in cold water.
  2. Combine rice, corn, GREENSEAS tuna , capsicum and coriander. Mix well. Spoon onto serving plate.
  3. Using a fork, whisk the sweet chilli, oil, soy sauce and lime juice. Pour over rice mixture and sprinkle with cashews and extra coriander if desired.
